4-Ingredient Banana Snack “Cookie”


I call this a cookie, but it could easily be called something else – a bite, a treat, a cluster, etc….  Cookie makes the most sense because it looks like a cookie and cooks like a cookie, but full disclosure, it doesn’t exactly taste like a cookie.  Unless of course you like your cookies to taste really healthy and good for you.  If you’re looking for a Chips Ahoy taste, stop reading here.  That being said, this little pseudo-cookie is still super tasty and a household favorite around here.  Made with just 4 pantry-staple ingredients, sugar not being one of them, they can be thrown together in a matter of minutes.  I like to make a batch during nap time and let Audrey enjoy a couple when she wakes.  They’re also great at breakfast, as a dessert, or after a class when you’re on the go.  They’ll keep in the fridge in an airtight container for days, but beware, you might find them strangely addictive and eat them all yourself.

4-Ingredient Banana Snack "Cookie"

Serves: Makes approx. 18 cookies

Ingredients

  1. 2 very ripe bananas, the riper the better

  2. 1 cup rolled or quick cooking oats

  3. ¼ cup unsweetened nut or seed butter of choice (almond, sunflower, peanut, etc...)

  4. ½ cup dried fruit (I prefer chopped, pitted dates, but raisins, cranberries, and chopped apricots also taste great)

Instructions

  1. Preheat oven to 350. Line a baking sheet with parchment paper.

  2. In a medium bowl mash together banana with a fork. Stir in remaining ingredients. Mix well. Drop 1 tablespoon at a time of mixture onto baking sheet, flattening gently with your hand. Bake for 12-14 minutes until cooked through and lightly golden.
