Crispy Honey Mustard Chicken

I always have a box of brown rice crispy cereal in my pantry. Which is odd, because I don’t like to eat it as cereal. I often use it for random things like adding to protein bars, sprinkling over yogurt, making rice crispy treats, or crushing and using as a quick breadcrumb. That’s where these crispy honey mustard chicken strips come in. Like an updated, healthier version of the classic chicken tender, these are baked, not fried, and topped with whole grain cereal that will give you a boost of fiber, vitamins and minerals. Crunchy on the outside, tender and juicy on the inside, kids and grown-ups alike will enjoy this crispy chicken. Just add a side of your favorite vegetable and you’ll have a perfectly quick and easy weeknight meal. And who doesn’t love dinner that is fast, delicious, and sure to be a crowd-pleaser?

Crispy Honey Mustard Chicken
Serves: 4
Ingredients
1¼ lb. boneless, skinless chicken breast, cut into strips
¼ cup dijon mustard
¼ cup honey
2 cups brown rice crispy cereal, crushed
½ teaspoon salt
¼ teaspoon black pepper
Instructions
Preheat over to 375. Line a baking sheet with foil and top with a cooling rack. Lightly coat rack with oil or cooking spray.
Whisk together mustard and honey in a small bowl. Place crushed cereal on a small plate, mix in salt and pepper. One by one, dip chicken strips into honey mustard and then coat with cereal. Press chicken into cereal to make sure it sticks. Place strips on rack and continue with remaining chicken. Place in the oven and cook for 30 minutes, or until chicken is cooked through and crisp.
Notes
Optional: serve with additional honey mustard for dipping (just not the honey mustard you used for coating the raw chicken)
