Ham & Egg Cups


Wakey, Wakey Eggs and Bakey… Well, sort of. More like little smoked ham cups filled with avocado and eggs, but just as delicious! These are seriously a lifesaver on busy mornings when I’m trying to get everyone out the door. I started making them a lot when I tried Whole30 last year and fell in love. Even better, the girls (and my hubs) love them as well. They’re a cinch to make, protein-packed, and they reheat beautifully. A total morning win-win.

Ham & Egg Cups

Serves: 6 cups

Ingredients

  1. Cooking spray (I use this coconut oil one)

  2. 6 slices smoked deli ham

  3. 1 avocado, pitted and smashed

  4. 6 eggs

  5. Salt & pepper

Instructions

  1. Preheat oven to 400

  2. Coat a muffin tin with nonstick cooking spray, place one piece of deli sliced smoked ham in each cup, add a tablespoon of smashed avocado (you can add some shredded cheese if you like as well), and top with a cracked egg. Sprinkle each cup with salt and pepper. Place in oven and cook 15 min for a runny yolk and 18 min for a well done egg.
