Kaleamole!


I don’t believe in sneaking veggies into my kids’ food.  I believe the key to getting kids to eat vegetables is exposure.  I know being sneaky may seem like a great idea and it may even work when they are 2, but it is surely not going to work when they are 12.  It’s all about exposing them to a variety of foods when they are little so that they will hopefully appreciate them when they are big.  That being said, of course I put veggies into things that may be unexpected, beets in brownies, spinach in smoothies, zucchini in muffins, but there is always 100% full disclosure.  They know it’s in there.  And they know they are enjoying a beet brownie.  That way, the next time I give them a salad with beets in it, they remember how much they liked beets in that brownie.  Not sneaky, just clever.  Which brings me to this Kaleamole…

My kids love guacamole.  With chips, a quesadilla, a fork, whatever they can eat it with they are game. So when I heard all the buzz surrounding Kaleamole, I figured I’d give it a shot.  It’s a new and different way to expose them to kale and it sounded pretty delicious.  I’ve never thought to add kale to guacamole, and I have to say, I’m really glad I tried it (and so were the girls!)  You just throw a handful of cleaned, trimmed leaves into your favorite guacamole recipe and boom, you’ve just added an awesome serving of vegetables into your kids’ meal.  And it’s up to you whether or not you tell them it’s in there 😉

Kaleamole!

Serves: Approx. 3 cups

Ingredients

  1. 1 cup loosely packed kale leaves, cleaned and de-stemmed

  2. ½ tablespoon olive oil

  3. 4 ripe avocados, halved and pitted

  4. 1 lime, juiced

  5. ½ cup chopped red onion

  6. ¼ cup loosely packed cilantro leaves

  7. ¾ teaspoon salt

  8. 1 small jalapeño, seeded and chopped, optional

  9. ¼ cup chopped tomatoes

Instructions

  1. Massage kale with olive oil and set aside while you prepare other ingredients.

  2. In the bowl of a food processor, combine massaged kale, avocados, lime juice, onion, cilantro, salt, and jalapeño if using. Pulse until desired consistency - a few pulses for extra chunky and longer for extra smooth (how my girls like it)

  3. Place kaleamole in a bowl and stir in tomatoes. Add additional salt or lime juice to taste if you prefer. Serve immediately.
