Recipe: Maple-Miso Salmon

Looking for a delicious and healthy weeknight dinner that’s ready in no time at all? This maple-miso salmon is it. Loaded with sweet and kid-approved flavor, it requires very little preparation or ingredients, and is packed with brain and heart healthy omega-3 fatty acids. Need I say more?
Serve with a side of brown rice or stir-fried veggies such as carrots, broccoli, peppers, mushrooms, snap peas or bok choy.
Maple-Miso Salmon
Makes 2 adult and 2 kid servings
9 months + up
3 (8oz.) salmon fillets, preferably center cut
2 tablespoons white miso paste (also known as sweet or mellow miso)
2 tablespoons unsweetened rice vinegar
2 tablespoons pure maple syrup
Preheat oven to 400. Line a baking sheet with foil. Place salmon on foil and pat dry with paper towels.
In a small bowl, whisk together miso, rice vinegar and maple syrup until smooth. Brush salmon fillets with mixture. Allow to sit for 30 minutes, if you have the time. Otherwise, place in the oven on center rack. Cook for 10 minutes. Move salmon to top rack, directly under broiler. Turn heat to broil and cook for an additional 1-2 minutes, until top has caramelized slightly.
