Recipe: Watermelon Cooler

It’s 90 degrees in NYC today. And while I don’t miss the winter we had here, I must say chasing after a toddler in this kind of heat isn’t exactly refreshing. In order to keep Audrey (and mama) hydrated, energized, and cool in this weather I focus on light and refreshing drinks. This watermelon cooler is just that. It’s naturally sweet, cool and icy, and perfect on hot summer days. Plus, it’s super easy to make and healthier than your average slushy or frozen drink. If that’s not enough, it’s the prettiest shade of pink – and what kid doesn’t like a fun colored drink?
Watermelon Cooler
9 months + up
Serves 2-3
2 cups cubed watermelon chunks (seeds removed if any)
1/2 cup hulled strawberries
1/2 cup coconut water
2 large handfuls ice
Place all ingredients in a blender and blend until smooth. Serve immediately.
