Roasted Pear Applesauce

When Audrey was just starting solids, applesauce was a go-to favorite. I’d add it to yogurt, oatmeal, vegetable purees, or serve it on its own – it was always met with delight. Today, at almost 2 1/2, Audrey still loves her applesauce. These days though it’s also added to baked goods and pancakes or served on top of sweet potato latkes or pork chops. And the addition of pear, well that’s just bringing it up one really delicious notch. It’s healthy, freezes well, and highlights the best of New York winter fruit. Not to mention it’s easy to make and tastes SO much better than anything you’d get in a jar.
Roasted Pear Applesauce
Serves: 4
Ingredients
2 red apples, peeled, cored and cut into chunks
2 pears, cut into chunks
2 tablespoons coconut oil
1 tablespoon maple syrup, optional
1 tablespoon lemon juice
½ teaspoon cinnamon
¼ teaspoon ginger powder
Instructions
Preheat oven to 425. Line a baking sheet with parchment paper.
In a medium bowl, toss together all ingredients. Scatter onto baking sheet. Place in the oven and cook for 15-20 minutes, or until apples and pears are beginning to lightly brown and are fork tender. Remove from oven and place in a food processor. Puree until desired consistency.
