Sesame Chicken & Broccoli


With the warm weather officially upon us, afternoons outside are essential with a toddler in tow. Whether with friends, on a walk, or at the park, these warm days call for more time in the fresh air and less time in the kitchen.  This quick and easy sesame chicken & broccoli is just the answer.  Sautéed not fried, brown rice instead of white, and not nearly as sweet a sauce as your typical sesame chicken, our version will also taste fresher and healthier.  Not to mention even more delicious.  Just what the summer doctor ordered.

Sesame Chicken & Broccoli

Serves: Serves 4

Ingredients

  1. 1 head of broccoli, cut into florets

  2. ¼ cup honey

  3. 3 tablespoons black or white sesame seeds

  4. 3 tablespoons low-sodium soy sauce (tamari if gluten-free)

  5. 1½ pounds boneless, skinless chicken breasts, cut into small chunks

  6. Pinch of sea salt

  7. ¼ cup flour (All-Purpose, Whole-Wheat, or GF Blend)

  8. 2 tablespoons canola oil

  9. 1 ½ cups cooked brown rice

Instructions

  1. Steam broccoli on stovetop until just tender, about 5 minutes.

  2. In a small bowl, combine honey, sesame seeds, and soy sauce; set aside. Add flour to a separate bowl. Season chicken with a sprinkle of salt. Lightly dip chicken pieces into flour, shaking off any excess.

  3. In a large nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add half the chicken; cook, turning occasionally, until golden and cooked throughout, 6 to 8 minutes. Transfer to a plate; repeat with remaining tablespoon of oil and chicken. Return all the chicken and the broccoli to the skillet; add the soy-honey mixture and toss to coat. Cook an additional few minutes until sauce thickens. Remove from heat.

  4. Serve the sesame chicken & broccoli over cooked brown rice. Garnish with additional sesame seeds if you'd like.
