Superfood Granola Bars (V, GF)


Granola Bars that are easy to make, portable, kid- and adult- friendly, and perfect for breakfast, lunch, or snack-time are the best. Granola Bars that are loaded with superfoods are even better. Say hello to one of my favorite new creations: the Goji Berry (Superfood) Granola Bar. It’s filled with bananas, berries, cherries, hemp hearts and oats. It’s NOT filled with refined grains or sugar. My daughters love it. Well, my oldest loves it as is, and my little one loves to pick it apart, eat the goji berries and cherries first, then nibble at the rest. #threeyearolds

Superfood Granola Bar (V, GF)

Serves: 12 bars

Ingredients

  1. 3 (very ripe) medium bananas, mashed

  2. ¼ cup melted coconut oil

  3. 2 tsp pure vanilla extract

  4. 1 tsp cinnamon

  5. ¼ tsp salt

  6. 2 cups whole oats

  7. ½ cup dried goji berries

  8. ½ cup unsweetened dried cherries

  9. ¼ cup hemp hearts

Instructions

  1. Preheat oven to 350. Lightly grease a baking sheet with cooking spray or coconut oil.

  2. In a large bowl, mix together mashed bananas with coconut oil, vanilla, cinnamon and salt. Stir in the oats, goji berries, cherries and hemp hearts, mix until thoroughly combined.

  3. With damp hands, pour the mixture out onto the prepared baking sheet. Form mixture into a flat rectangle, with even thickness (like shaping a meatloaf), you want it about 1' thick.

  4. Bake 25 minutes, until firm and golden. Remove from oven and let cool completely, about 15-20 minutes.

  5. Slice into bars. Store in an airtight container in the fridge for up to 1 week.
