Very Berry Beet Smoothie


Beets probably aren’t the first thing you think of when making a smoothie.  But they may be now once you try them mixed into this fruity and flavorful concoction.  Earthy and rich, they mix perfectly with the sweet combination of berries and coconut water.  Plus, they add the most beautiful & bright magenta color.  If your little one doesn’t already know the flavor of beets, this candy-like delicious drink could be the perfect Valentine’s morning treat.

Very Berry Beet Smoothie

Ingredients

  1. ½ cup peeled and chopped cooked beets (about 1 medium beet)

  2. 2 cups mixed frozen berries

  3. 2 cups coconut water

  4. 1 banana, peeled

  5. 1 large handful of ice

Instructions

  1. Place all ingredients in a blender and blend until smooth, about 60 seconds.

Notes

* Beets: You can either buy cooked, peeled beets or prepare them yourself. To do so, either steam or roast. To roast, place washed and scrubbed beets in a small baking dish and add water to come ½ inch up the sides of the beets. Cover with aluminum foil and place in a 375 degree oven. Bake until very tender, 45 to 60 minutes. Remove from the oven and let cool. Peel the beets and roughly chop, discarding the skins. To steam, peel and wash the beets. Cut into chunks and steam on the stovetop until tender.

3.2.2708 * To peel beets, use disposable gloves or put your hands into ziploc bags.  This will save you days of pink hands.  Otherwise, save yourself the trouble and buy already cooked and peeled beets, such as these Love ones (how appropriately named given tomorrow ❤️)
